Cooking dinner is one of my very favorite things to do. Since we’ve been married I pretty much make dinner every night, which certainly hasn’t helped our waistlines. Making dinner for my family is one of those activities that I used to dream about and I plan to make it a priority in our home for as long as I can. My mom did all of the cooking in our home growing up, so I am mostly self-taught and really enjoy the learning process. I know it’s hard to find meals that you love, aren’t too difficult, and don’t make you feel guilty, so I try to share the winners here! This is what we’ve been eating and loving lately.
- Green Chile Chicken Enchilada Spaghetti Squash
- Slow Cooker Ranch Chicken & Veggies
- Seared Salmon with Gnocchi & Roasted Cauliflower
- Sheet Pan Poblano Chicken Fajitas
- Chicken Guacamole Taquitos
We don’t follow any particular diet or eating plan, but my sisters and I are doing a round of Whole-30 in January/February. I’m so excited because I’ve heard you are in the kitchen all the time during Whole-30, but I’m also very nervous because I’m not great at sticking to such strict rules. Also, I love wine! If you have any tips send them my way!
