Meal planning has become a weekend ritual of mine. It’s mostly because I am incapable of grocery shopping with out a list, but meal planning has allowed me to challenge my cooking skills. We have a standard rotation of healthy, easy meals but each week I introduce one new recipe. When we’re done eating I say “again?” and if Jordan’s answer matches my yes, it gets written on a recipe card and welcomed into the rotation.
The last few weeks I have had some WINNERS and I’ve been dying to share them with you. Our house is not paleo, whole30, vegan, 21DF etc. During the week we try to eat healthy and focus on portion control. We typically eat ground turkey or chicken every meal, although one of the recipes below is ground beef based! I also try to find recipes that don’t call for 7,000 ingredients. So here are the recipes that we tried and loved …
- Almond-Crusted Chicken Nuggets: I honestly didn’t loooooove this one because I was keenly aware that I not eating panko chicken nuggets haha. However, Jordan loved them so they are going to be a new staple. Watching him grind the almonds in the food processor was hilarious. Next time I might toast the almond mixture before breading the chicken just to make them a bit crunchier.
- Honey Teriyaki Chicken Rice Bowls: Um, yes and yum. These are so easy to make, incredibly delicious and filling and make wonderful leftovers. I used a steamer bag of broccoli instead of steaming fresh broccoli, which was nice because this one does have quite a few ingredients. While making this I realized that I didn’t have rice vinegar, so I just skipped it and everything was still delicious.
- Beef Enchiladas: These are just straight up not healthy for you. We had them on the weekend, so it’s all good. 80/20, right? This would be a great recipe for a bigger family than ours, but we have lunch leftovers covered for the week so that’s okay. I didn’t make the enchilada sauce, but maybe someday I will! Super easy, way yummy.
- Chicken Fried Rice: I want to make this every week. I’ve day-dreamed about this recipe a few times since having it, and since I now have the unique ingredients on hand we might just keep on having it. Again, it’s not the healthiest recipe but it’s darn good. And easy!

Ohhhhhhh. I cannot forget to tell you about the most incredible chocolate chip cookie recipe The Everygirl posted. I’ve had a dream of mastering the chocolate chip cookie, but I no longer need to. The chewy recipe just slays and you’ll be sorry not to give it a try.
